My daughter has a peanut allergy, so we are always on the lookout for nut-free products. We love the peanut butter-like product called Wow Butter. It’s better than the other similar products we’ve found, which can be really oily or hard to spread. We find it in the section with regular peanut butter, but it’s usually on the top shelf.
Here’s a nut-free peanut butter cookie recipe that we enjoy.
Wow Butter Cookies (or Peanut Butter Cookies)
Ingredients:
1/2 cup butter (softened)
1/2 cup “Wow Butter” (use regular peanut butter if you don’t have to worry about nut allergies)
1 cup sugar
1 egg
1/2 tsp. vanilla
1 cup self-rising flour
Directions:
Mix butter, peanut butter, sugar, egg and vanilla until fluffy. Add flour and stir.
Refrigerate 1 hour.
Shape into balls.
Press down criss cross with a fork. (see tip below)
Bake 375 for 10 minutes.
BTW…
We have a secret for making a perfect criss cross. Fill a glass with ice water. Dip your fork into the water and then onto the cookie.
