(Note: Those are crushed Doritos on top…I should have added cheese on top, but accidentally put the shredded cheese under the Doritos. I made another one for a friend and it looked much better topped with the cheese.)
A looong time ago, I was watching the morning news and Charlie Gibson was making his recipe entitled, Charlie’s Holiday Casserole. I wrote down the recipe and have made it occasionally through the years.
We made it again recently and I thought I’d post it here. It’s one of those open the cans, dump, and mix it all together kinds of casseroles that are super quick and very tasty.
Ingredients:
1 can chili with beans
2 cups sharp cheddar cheese, grated
1 large 12 ounce package Doritos
10 to 15 oz. enchilada sauce
8 ounce can tomato sauce
2 tbsp. onion, grated
1 ¼ cup sour cream
Directions:
For the topping, set aside sour cream, ½ cup of the grated cheese, and 1/3 of the Doritos bag.
Set aside 2 tbsp. grated onions. Take remaining 6 cups of Doritos and crumble with your hands into mixing bowl.
Mix the onion, and all the other ingredients – except those for the topping – and place into an 8 ½ by 11 inch casserole dish.
Bake for 20 minutes at 375 degrees.
Remove casserole from oven. Spread on sour cream, cover with Doritos, and sprinkle ½ cup cheese.
Bake for an additional 5 minutes and serve.
Serve with a salad and toasted french bread slices.
