Since I don’t do a lot of couponing (Lord knows I’ve tried!), when I left a full-time job to homeschool, I had to figure out how to come up with budget friendly menus. My budget menus cost around $60 per week, depending on sales.
One great tip for eating affordably is to try to include a pasta, a taco type meal, and a breakfast for supper meal into your menu each week. Pasta noodles, flour tortillas and scrambled eggs cost very little and can go a long say.
My budget menus includes ideas for dinner only. We usually do something very simple for lunch. I’ve included some easy lunch ideas below.

Lunch Ideas:
- Spaghettio’s with whole wheat Cheese Nips
- Hot Pockets with baked chips
- Cheese Roll Ups (cheese inside flour tortilla, microwave 15 seconds to melt cheese; add ham or turkey, if you’d like)
- Macaroni and Cheese bowl with wheat toast
- Pigs in a Blanket (use hot dogs cut into strips and crescent rolls)
- Mini pizzas using refrigerator biscuits flattened & topped with spaghetti sauce, cheese, etc.
- Hot Ham and Cheese on Croissant (split croissant, add ham and cheese and microwave to melt)
- Book It Pizza Hut Program gives coupon for free individual pizza per month (Oct.-March) for meeting reading goals parent sets http://www.bookitprogram.com/
- Homemade Hot Pockets (use crescent rolls flattened out, fill with ham and cheese, and fold over and seal)
