It’s that time again! The beginning of a new school year is filled with fun! It can also be a busy time as your children get back into the swing of things after a summer off.
I have a solution for those nights when you need to make a quick but hearty meal…
Chicken Pot Pie with Cheddar Drop Biscuits
EASY Chicket Pot Pie
Ingredients:
2 cups frozen mixed vegetables
2 cups shredded chicken (Tip: Use kitchen shears to quickly shred.)
1 can cream of chicken soup
1 can vegetable or chicken broth (use the empty soup can to measure)
salt/pepper
*Double or triple for a big family.
Directions:
Mix all of the ingredients together and pour into a baking dish.
Cheddar Biscuit Topping
Ingredients:
1 cup flour
1/2 tablespoon baking powder
1/8 tsp. salt
1/2 cup milk
1/2 stick melted butter
Mix. Drop by spoonful on top of pot pie.
Bake at 400 degrees for approx. 40 minutes. Cover with foil if the biscuits start to brown before they are done. Use a fork to check if they are “gummy” on the bottom.
