While looking for creative ways to make healthy meals for my family, I came up with this Healthy and super EASY Homemade Black bean Burger recipe that is very BUDGET friendly. I prepared my son a regular meat burger, but my daughter and I prefer veggie burgers. Also, with the price of meat so high, this black bean alternative really hit the spot!
Ingredients:
1 can black beans, rinsed and drained
1 egg
breadcrumbs
A1 sauce
salt/pepper
Directions:
Rinse and drain a can of black beans and pour into a bowl.
Add one egg.
Mash.
Add bread crumbs and a splash of A1 sauce.
Stir.
I made my breadcrumbs by toasting a Dave’s Killer Bread bagel and cutting it up.
Spoon onto hot griddle, oiled with avocado oil (or oil of your choice).
Cook and flip until heated through to be sure the egg has cooked.
My daughter did not want bread, so she topped hers with greens, a sliced avocado, and a splash of A1 sauce.
I put my burger on a slice of toasted bread. I added a sliced avocado and lemon pepper seasoning on top with cucumbers on the side.
This recipe made four burgers, but you could easily double or even triple it! Just add more cans of beans, an additional egg, and bread crumbs until it’s holding together.
Enjoy!
Be sure to check out my blog post where I share how I grow these Boston pickling cucumbers. They are perfect for individual snacking to accompany a sandwich or burger. We also use them for cucumber sandwiches.
