A friend of mine makes the most delicious Chicken Pot Pie! It’s amazing!
Tonight, I made a variation of that pot pie, but since I’m not a great cook at all, I simplified it big time.
Ingredients:
1 can cream of chicken soup
1 can mixed vegetables
(you can add in chopped chicken breast, if you’d like)
1 bag frozen buttermilk biscuits
Directions:
Mix the soup and vegetables together. I drained almost all the liquid from the vegetables so that it wouldn’t be too runny. Pour into a baking dish. Place frozen biscuits on top. I used 5 biscuits for a 9 by 9 casserole. Bake at 350 degrees for about 30 minutes or until the biscuits are golden brown and the pot pie is bubbly.
Believe it or not, the kids picked pot pie over pizza tonight!
This would be a super recipe for your daughter to make. I’ll think I’ll file it under my “I Made it Myself” recipes. With a little help with the oven, she could do the rest all by herself.
